Kobus van der Merwe cooks up an unconventional Bokkoms-on-toast in his restaurant in Paternoster.
"Apple and gooseberries are the perfect slightly acidic counterpoints to the maasbanker, with seekoraal providing crunch, and orange beurre blanc and soft egg adding richness.
